Cha Shao Roast Pork*

 

For 4-6 people

. 2 lb pork fillet
. 2 tablespoons peanut oil
. 2 tablespoons honey

 

For marinade

. 4 tablespoons soya sauce
. 1 tablespoon sugar
. 2 tablespoon sherry
. 1/4 teaspoon pepper
. 1/4 teaspoon powered cinnamon
. 1 clove garlic (crushed)
. 1/2 teaspoon salt
. [1/2 teaspoon MSG (glutamate)]
. 1/4 teaspoon mixed herbs (Five spices)

 

How to

Slice pork along grain into strips 5-6″ long, 1 1/2″ wide and 1″ thick.
Mix all the ingredients for the marinade well, add it to the pork in a deep dish and let stand for 2 hours, turning the pork every 15 minutes.
Pre-heat the oven to 425°F, gas 7. Drain the pork (keeping marinade for further use), and place the strips across the rack over a roasting pan containing some water to catch the drips, to roast for 12 minutes. Brush the pork strips with marinade and peanut oil (or sesame oil).
Return the pork to the oven to cook at 350°F, gas 4, for 10 minutes.
Brush pork with honey and roast for further 5 minutes.
When ready to serve, the pork strips should be sliced against grain into 1/4″ slices, and eaten with soya-chili dips.
